The Comforting Vej Biryani (Vej Biriyani)

It's a fantastic choice for special occasions or when you simply crave something richer than your daily meal. This recipe uses quality ingredients to ensure that every bite is bursting with flavour.

The Ultimate Veg Biryani – Cooking Process

Step 1: Prepping and Par-Boiling the Rice

  • Rinse the rice 3-4 times thoroughly, then soak it in water for 20 minutes. Drain and set aside.

  • In a large pot, bring plenty of water to a boil with 1 Bay Leaf, 2 Green Cardamoms, 2 Cloves, 1 small Cinnamon stick, and salt.

  • Add the drained rice and cook until it is 70% done—it should still be slightly firm in the centre.

  • Drain the rice immediately using a colander and spread it out on a plate to stop the cooking process.

Step 2: Marinating and Cooking the Vegetable Base

  • In a large bowl, whisk together the Yogurt, Ginger-Garlic paste, and all the spices listed under the ‘Marinade and Flavor Base’ section.

  • Add all the mixed vegetables and Paneer cubes to the marinade. Ensure everything is well coated. Let it sit for at least 15 minutes.

  • In the heavy-bottomed pot you plan to use for the final Dum, heat 1 tbsp Ghee.

  • Add the marinated vegetables and cook them on medium heat for 7-10 minutes, stirring occasionally, until they are half-cooked. This forms the bottom layer.

Step 3: Layering and Sealing for 'Dum'

  • Spread half of the cooked vegetable base evenly at the bottom of the pot.

  • Layer half of the 70% cooked rice on top of the vegetables.

  • Sprinkle a portion of the fried onions (Birista), chopped Mint and Coriander leaves, and drizzle half of the saffron milk and Kewra/Rose water.

  • Repeat the layers: remaining vegetables, then the remaining rice.

  • Finish the top layer with the remaining Birista, herbs, saffron milk, and the last drizzle of ghee.

  • Cover the pot very tightly with a lid. You can seal the edges with atta (wheat dough) to trap the steam completely.

  • Cook on the lowest heat possible for 15-20 minutes.

  • Turn off the heat and let the Biryani rest, unopened, for another 10 minutes. Gently fluff the Biryani from the sides before serving. Enjoy your homemade delight!
